So I decided to make a table that folds down that would support a grill or a cooler, etc. As I have a swing away tire carrier, i decided to mount it to that. so i bought some diamond plate and hinges, a 6 ft piece of angle iron for stability, and a hasp latch to secure it. Initially I had a 3'x2' but it blocked all vision out of the back, so I cut it down to the top length of my spare. No rattles and it works great. If I was to do it again, i would have just bought a thicker piece of plate so that i wouldnt need the supports. I also bought a piece of rebar to stick from the lock pin to keep the swing away carrier stable. Here are some pics. If you need advice on this, just let me know.

looks awesome , but judging from the size doesn't it block your rear visibility?

I cut it down to about 2'x2'4" now it doesnt block any vision as it only goes to the tire height. I will send a pic soon.
