New Jeep Owner

Hi everyone.
My first Jeep, you can checkout my profile for info and photos. So far Im lovin it other than the lack of RAW power. Up until now Ive always been a Volvo owner 300hp. My kids love it and the jeep fits my surrounding better than my Volvo.

I have a few questions right off the bat...

What is the largest size tire I can put on my stock 2012 Jeep Wrangler unlimited Sahara without a lift kit and no rub. I currently have P255/70R18 OWL On/Off-Road Tires (Bridgestone Dueler).

Also I live in Los Alamos New Mexico and was wondering about best sites to find off road Jeep trails in New Mexico, Arizona, Utah and Colorado? I don't plan on rock crawling or I would've gotten the Rubicon but will the Sahara handle primitive Jeep trails? I mean moderate off roading, snow, mud, some rocks in trails. Im not sure what to expect out of my jeep off road?
