Coverking seat covers over leather.

I want to protect my leather seats from the sun. (top will be off all summer).

Is there a chance that these seat covers will trap moisture and discolor the leather or anything?

I'd hate to f-up my seats trying to protect them.

I don't know about the seat covers but I do know about neoprene. I wear it diving. It may be water resistant but it's not water proof. I am interested in what others use for seat covers though if anything?

The best thing for leather seats is simply to maintain the leather....not talking a simple squirt of some liquid to make them shine. Use a good cleaner, good conditioner, and dressing. Keeping them clean and conditioned will work wonders even in the hot bright Texas sun.
If your going to be parking it in the sun every day, you can also drap an old beach towel or sheet over the seat to keep airborn elements off of the leather.
