When the wheel is turned most of the way to either side and when breaking I get a crazy vibration going on and the ESP goes haywire as well... I guess there's some gnarly rubbing going on? What can I do to fix this, it was a bit startling when coming off a freeway ramp and trying to stop, haha.

Also, when I engage 4x4 I get a strange clicking/popping noise...?

There could be many things going on here. Start with making sure your steering wheel is perfectly centered. Make sure everything is torqued to spec. What size lift do you have? what size tires?

Are you engaging 4WD on the pavement?
