So my wife just told me she won't ride in my Jeep anymore...

At least not in daylight. All because I spray painted most of the hood. It had peeled off all the way to the metal and she didn't want to spend the money on getting it repainted. I warned her. Ha ha

you should just sand it down, prime it, and paint it slowly...it'll turn out just fine!

Ha ha. Y'all are awful. I actually didn't want it to look too good because I plan on getting done right eventually. But if that doesn't happen I'll probably redo it when the weather gets better and do a better job then.

Hit it with a good paint stripping disc and rattle can it. Should be fine

Maybe I am being a bit analytical here, but it sounds as if the op has done this to force his wife into agreeing to a new paint job.
I could be wrong but it doesn't happen often.

My number one concern is really just preventing rust. But if it works out that the hood gets repainted by a pro I sure won't complain. Really I'm pretty disgusted that the paint is completely peeling off an 03 to begin with.
