I am getting ready to drive across several states towing a fully loaded trailer. It's possible my route could take me over the Rockies. Can anyone tell me if this is going to be a problem for me? Any feedback & advice would be most welcome!

Do you have any guess-timate what i will weigh? That will be the biggest factor, especially as you get into the mountains. A Jeep can tow OK, as long as you don't overload it and try to stop too quickly. I guess it also depends on your wheel/tire/gearing combo as well....

U haul will not rent you a trailer, they won't even rent for a Cherokee, heck they won't even rent one of those trailers to an explorer. That was my experience 4 weeks ago when I had to move my daughter back home from philly 90 miles away and I even know the guy with the Uhaul place. Ended up renting an open flatbed that once loaded was pushing me through intersections in my XJ.
And for what it cost if they did rent it to me, I had second thoughts that it was cheaper to actually buy an 8ft steel trailer in the long run, two rentals from Uhaul would about pay for one.
You could always buy one and resell it once you don't need it any more.
