Give this a whirl first.
Take a driver and smack the top of the U-joint cap to drive it down slightly. The snap ring should then be no problem removing.
Follow suit on each cap as you go.
The caps tend to push out against the snap rings, pinning them in place. Giving them a little pop gives some clearance between the snap ring and cap.
