Bleeding brakes on a jk questions

Ad to replace a front caliper, now I need to bleed the brakes. I have the sequence but have a question or 2.

Do I have someone pump the breaks and hold down the pedal and then open the bleeder screw. The close the screw and let the pedal back up and repeat that until all air is removed?

Or

Do I open the bleeder screw 1st then press down the pedel hold tighten the screw then release the pedel. Repeat until all air in removed?

When I do it the 1st wY I hear a loud release of air and I can't see the fluid coming out the tube but the bottle is filling up with brake fluid.

I've done a lot of brakes. And I've only ever done the first way you described.
Here's what I do.
Put some fresh fluid in a clean bottle. Just a water bottle or a pop bottle.
Stick a piece of aquarium hose on the bleed screw. And put in bottle. Making sure end of tube is submerged in brake fluid.
Have a buddy pump the brake pedal about 5-10 times. Slowly! If you pump fast, it sloshes the fluid and can break up the air bubbles and make it worse.
Then buddy holds pedal (communication is key!) and says he's holding. You then turn bleed screw and as soon as the flow starts to slow down, tighten it up again. Don't let it come to a stop. Then tell buddy when you have tightened it up. Then he pumps again, I always do three cycles then I check the fluid in the master.
Always start furthest away from the master.
And make sure you have the right calliper. I had one installed on the wrong side and it caused a world of grief. That was on a 95 YJ though.

Before using this procedure I tried to use the instructions on the one man bleeder bottle kit which I think is what you describe as option 2 and it didn't work for crap.

Go rent a vacuum bleeder from AutoZone. No pumping required. Fill the fluid res to the top, then suck the air out of the line with the vac bleeder. Repeat for each caliper. I can bleed the brakes in 30 minutes if I'm not rushing.
