Fluid Change, what do I need

I have an 01 manual sport in need of some clean fluids.
I'd like to change everything out but I'm not entirely sure of what to use or how much I need. I don't really have any auto experience, but I have tools and common sense, how far will that get me? This is what I'm thinking...

dif --Valvoline 75W90 or 80w90 synthetic-- how much?
Transfer Case-- Mobil-1 ATF --- how much?
Transmission--- redline mt-90 --- 3.5 quart?
Brake --what kind-- how much?
power steering --what kind-- how much?

Any advice, what filters or gaskets should I get?
