When I wired mine up, I found a rubber grommet through the firewall, just below the brake reservoir, that wasn't being used. I cut in through that to run the wires, then just zip-tied them up under the dash, across to the center console.
It will help if you can bend like Gumby when working under the dash.
As for what kind, there are a million right (and wrong) answers.
You should first consider where you'll be using them, and what you want them to light up for you. Then decide how much you're willing to pay.
You can get sets at Walmart for $40 a pair, or you can buy high-end off road lights, that can run as much as $300 for each light.
I went with Hella 500FF driving lights, partly because I like the look, they're SAE approved (road-legal) and they can be 'upgraded' if you're willing to start chopping holes in teh housing and do more wiring.
