2.5L possibly overheating??

Engine was running fine today, THEN I just had to put in the thermostat (it did not have it in prior to today).

Now my temp gauge FINALLY is working (it did not read anything before), says it is running one mark below the 210 mark, then it fluctuates all the way up into the red and stays there. However, engine does not sound like it's pinging or detonating or pre-igniting, and there is no coolant being shot out of the radiator cap, or into the over flow. It does click every once in a while, but I'm not sure if that's from it running hotter, or something else. It kind of sounds different than it did before, but again I'm not sure if that's from the higher temp, possibly.

It has oil in it, all the way up to the full mark, and I just did an oil change on it the other day. Oil pressure gauge reads right at the 40 mark.

Could this possibly be the temp sensor(s) being bad, and not giving accurate readings? It looks like there is 2 of them, but I'm not sure? I did make sure the electrical membranes are getting a good contact, and there is no breaks in the lines.
