temp issure need advice

I have a 90 yj with a 2.5. My issue is when I'm running the temp is fine, runs right at 210. but if I stop some place and shut it off then turn the key back to run so I can listen to the radio without starting it the temp gauge will soon peg past 260. It has always done this since I've had the jeep but in the mean time I have put in new water pump, radiator, hoses, fan clutch, and heater core. Wondering if this is normal or if there is something I can do to correct it.

Sounds like the gauge going bad, especially if you've replaced pretty much everything else connected to cooling. Does it run like it's overheating? have you checked your oil for water to see if you've got a blown head gasket? Are you running 50/50, water, straight coolant? how's your thermostat?

Themostat is new too, coolant mix is 75 coolant, 25 water, no blown head gasket or water in oil. Runs fine with plenty of power. Once it starts to peg the gauge when its off if I start it up the temp comes right back down to 210 with in 45 sec to a min. If I let it go it will peg and stay there for 5 min or so then will take about 20 min to come back down on its own.

Wouldn't the gauge read high anytime you have a hot engine and no water circulation. The sender is probably picking up heat from the hot engine block. If you just leave it does it go down on its own?

Have you checked for air in the system and burped it? Sounds like what my Miata used to do when I had air in the system. Would be hot immediately because the sensor was where the air pocket was. With the radiator open, squeeze the hoses and add water. See if you can get some air out.
