A few tire questions

I recently got a slashed tire. While that does suck, the tires were nearing the end of their life so all it did was force me to look into new tires a little sooner than I wanted. I was running Mastercraft Courser A/T 33x12.50r15. I love the look and stance of my jeep with these tires but am seriously considering moving down to a 31x10.50r15 for a few reasons. Price is one, wasn't ready to splurge on tires rt now(damn wedding season cost me a fortune this summer lol). Second, and please correct me if I'm wrong, I think the 31's will help me with my mpg. This is my daily driver and I have a 97 Wrangler SE, not a lot of power to move those 33's.

After I figure out the size I'd love to hear some suggestions on what tires to get. A lot of research is pointing me towards the Cooper AT3's but I'd like to hear some feedback from anyone who has other suggestions as well as anyone who has those tires. I appreciate any feedback from you guys and gals. Thanks!
