8" wheel is fine...
Hopefully they're still sending you wheels with the correct bolt pattern (5x5 or 5x127); the 2000 Jeeps are different.
With that backspacing and no lift, you'll clear fine, width-wise. As for height, you'll be okay on-road and on moderate trails, but might get some tire/fender rub if you ever disconnect your sway bars and get into some serious flex.
