Your ABS system and your ESP system are related, but aren't. I'll try to explain.

In a nutshell, ABS activate when you hit the brakes hard, and skid. ABS overrides you, and "pulses" the brakes.

Now ESP activates when you spin the tires or go into a skid (the computer judges this based on steering wheel position, speed, and throttle/brake input) and is capable of controlling all the brakes, 2, or even individual braking for a tire, in order to gain control or avoid a roll over.

This being said, we have the ability to override...the computer override. Pushing ESP once in 2wd or 4hi allows wheel spin. In 4hi, press and hold to shut the system totally off. 4lo AUTOMATICALLY disengages all ESP functions.

Now ABS, although being it's own entity, is incorporated into the ESP system. However, it cannot be shut off unless you modify the system (which I don't suggest) or you experience a module malfunction.

As a direct response to your question, go out in the snow or something slick like mud or wet grass. Now gas it hard. A vehicle should flash in the dash indicating your spinning the tires, and the Jeep is overriding you and applying brakes to stop. Now push ESP. the same dash light should be lit. Now gas it hard. You should notice you can now spin the tires freely, do donuts, etc.
