I think that's reasonable.

It's about $1100 for the parts.

So $700 for labor and alignment (assuming that's included)

That is what the dealer quoted for parts and labor. I ended up installing with some buddies for the price of a large pizza.

Not too bad. I was quoted about $250 less including an alignment. The important part for me is the reputation of the shop and how they will fix anything the may go wrong after the fact.

The brackets set caster. Procal helps align steering. Toe... Maybe. There's really nothing to align?

Jordan from AEV who actually invented the procal said that unless you have an alignment table that the steering alignment function was not accurate nor worth using. He said better off just adjusting until the steering wheel was straight. A little disappointing but he was honest.

Well if you were local to me I would install it for free.. I installed mine took a few hours but it is really easy. I think 700 for install is a bit high maybe $400 but guess it depends on your location. With only 2.5" lift alignment is almost not needed. when they put mine on after I installed the lift they said it was spot on no adjustment needed. I did not use the Geo correction brackets though.
