Most soft tops, including the factory, have bows that holds the fabric up, and allows it to fold neatly down. But the Trektop just drapes over the rollbars, so there are no bows.
It does however, have door surrounds, which is what you're referring to as "piping". These are necessary, since the roll bar is a few inches inboard of where you want your doors to shut.
The Trekstep door surrounds are square tubing. They are very easy to remove when the top is off, but you can leave them on. They're fairly minimal and most people won't notice them when left on.
They are necessary for your second question: That's how it makes a seal around the doors.
#3: it connects to the windshield with a header channel, which either screws or bolts onto your Jeep, depending on your model year.
Windshield channels are the subject of much debate and consternation. I would just point out (if you read forum posts about them) that they are still the best solution anyone's come up with. Our competitors frequently use our windshield channels on their tops. We consider a compliment.
