I believe mirrors are what is the legality issue. Not doors themselves. As long as you have a rear view mirror and a drivers side mirror you're ok. If you are towing or loaded up very high so you can't see out the back, you need both sides

I think different states have different laws, but where I live it's ok along as you have at least 1 rear view mirror.

Yup. California requires 2 mirrors that can see 200ft back. A drivers side one and either an uninstructed rear view or a passenger side one

It is in Arizona. Come to think of it, not too many motorcycles and trikes have doors either.
