I wouldn't waterproof the seats. I have a very nice custom leather saddle on my BMW motorcycle, it sits outside 24/7, and I do not use waterproofing on it. Use a little leather balm or, preferably, lexal, every now and then. It keeps the leather supple and conditioned. My saddle has been totally soaked in day long rides in rain and it is fine.
