Tire / Rim Width Question

I'm thinking about using the OEM 17x7 wheels for 285/75/17s, that rim is a half inch narrower then recommended, how critical is that compared to a 17x8 or 17x8.5?
I've been told that isn't a problem, but have also heard otherwise from a tire shop.
What's the skinny?

Not a problem, many on here are running a 12.50 wide on that rim and a 285 is less than 11.50 wide.
