Just bought a 2010 Jeep Sport 16" rims all stock, no lifts, no nothin'. I know the better gas mileage and less sound and all that hoopla. But snow, some trailing and mud can i do these with no bigger tires or lifts?

You can, but depending on the type tires you have, you won't go far.... It's not so much the size as the tread design....

tires

i have a 2007 wrangler x and i was wondering if i could put 31 inch all terrain tires on it without a lift kit?

Considering that the stock Sport S, Rubicon, and Sahara all come with 32" tires stock, yes. The 31s will fit just fine, as long as they aren't super wide. Then you would need correctly backspaced wheels or wheel spacers.
