Saw a JK online that has "Wrangler" on either side of the hood, where the Rubicon would go if it were a Rubicon. I didn't see anything on the window sticker showing this as an option. Is this some kind of aftermarket sticker that could be removed?
Yes, they are just stickers. Use a hairdryer to heat up the stickers so the adhesive comes up easier. GooGone or WD40 will remove any residue. Just make sure you hit the area with a sealant/wax after you remove them.
I don't want them. They're on a brand new wrangler that I am considering purchasing. I want to know if I can peel them off, they don't look very nice.
Whether that specific lettering can be peeled off easily depends (obviously) on what, exactly, it's made of and how it's affixed to the jeep.
I suppose for example a dealer could choose to paint lettering on a jeep with a stencil. That would plainly be very hard to remove.
But chances are it's just a decal made of automotive vinyl, like what's available from the website I linked earlier. If so, it'll just peel right off. Perhaps a bit of WD-40 or some GooGone to clean off any residue, and there you have it.

Probably just a decal...you can get them almost anywhere with whatever you want them to say.
Have the dealer remove it.
I pulled my standard Sahara decal off the side and put Sahara on my hood instead.
