Dirty engine? I know at higher RPM (like above 3000) when the engine gets hot all the oil and gunk on it puts off a nice smell.

Funny enough, mine does the same thing. Coolant is good, thermo is good, 205-210 all the time. Get back from a drive and it smells hot.

Is it an automatic?

The transmission could be getting warm. Might be a good idea to look into an external transmission cooler.

My valve cover gasket has started seeping a little in the last few months or so and I smell a hot, not really an oil smell, when I get out of it. But you'll never see any drop on the stick or any smoke. Oh and I have a brand new tranny and 26k towing rated tranny cooler. But what do I know?

Mine is a stick, no tranny cooler.

It's a 5spd and I've put a new valve cover gasket on a few months back. Gauge always reads just below 210 but I get the funky smell

Check your heater core. Could be a very small leak that you're not noticing. You will smell it before you see it...(insert you're own joke here). But seriously, often times you will smell a heater core leak before you see it.
