There are numerous doorless mirror solutions. Do some poking around and you'll find many options. Some are store bought, some home made.
Here and here are a couple of topics that gave me some great ideas.

The wing really helps suck the middle down, gives ya better traction on the rocks. Kind of like a suck down winch.

That's not a wing! That's the handle he uses to take that vehicle in and out of the Lego's box, duh! Or Cracker Jack box? I can't remember...

I have never seen both sets in two locations but a lot of JKers will run two passenger ones, since with the doors on the relocated mirrors are useless. The driverside one is just left in the relocated position whether the doors are on or off if they do it right. Same pretty much goes for us as well. relocated passenger mirrors are worthless. Luckily in my state you only have to have 2 mirrors so a driverside and the rear view fit the bill. I run a Defiant mirror when my doors are off. Off road Jeep mirrors by Defiant Systems! They fit better and tighter than when I ran Harley Mirrors on my JK, plus they ahve a larger field of view.
