15x8 is a good size. You'll have a lot of choices with tire size and 15" tires are also much less expensive.
I've run the BFG MT's and I'm running the Mickey Thompson Baja Claws. Between the two the BFG is probably the best choice for an all around tire that sees mainly pavement and trails sometimes. It has much less road noise than the Claws. Although I think the Claws works great for me as my Jeep isn't a daily driver and it's a good all around tire too.
One other tire you might want to take a look at is the Toyo MT's. I don't have any personal experience with them but from what I've heard and read people always have good things to say about them.

I'm running 33x10.50 Superswamper TSL Raidals on 15x8 Crager Soft 8's (aka Crager 397's) on my 97 TJ and couldn't be happier. The tire might be alittle aggressive for your taste but I think the wheels are right up your alley. I bought mine from Quadratec for 34.99 each (here is a link http://www.quadratec.com/products/pr...l+Wheels&c=136) the center caps shown are $8.00 each and I picked those up aswell. They are cheap, tough, and I think they look good too.
I run TrXuS MT's (33x12.5x15) on my 15x8 wheels. They do just fine on road as they are already siped from the factory. Wear-wise, I'm doing just fine and they seem to be holding up just like my BFG AT's did.
The 12.5" tire width fits nicely on the 8" rim both on and off road and it lets me air down nicely on the trail.
Just be sure you get the proper backspacing, which for a TJ and 33x12.5's should be around 3.75 to 4". And the bolt pattern is 5x4.5.
