Cool Stuffing The Wheel Well

Need help, I have a 2006 TJ Rubicon I plan on keeping it a DD and boat hauler, with a little weekend woods. Want to really stuff the wheel wells with the max tire and change rims to 15" I was told by a 4wheel shop I could go 285 and adjust the stops. What do you ruff riders think??
