The PO had 30's on my jeep and then put new 31's a week before I bought it from him. I have the same gear ratio 3.73 as you. Could you explain in detail the difference in your opinion?
Background: I had a TJ with 3.07 gears with 30" tires. Then I bought an LJ with 3.73 and 30" tires. Loved the improved "kick" off the line with the gearing. Now that I have 31s, I feel like much of that "kick" is gone. Still better than my TJ 3.07 though. Also, overdrive kicks in at lower speeds than before, and the RPMs are a bit low for my taste.

Mine came with 31x10.50 BFG A/Ts on stock rims and an Unknown lift height (i think its 2 or 2.5in). I recently just went to Rubicon Wheels and 33x11.5 Mud Kings. Ordering 33x11.5 Hankook Dynapro M/Ts next week.
I like the 33s better, but with 3.07s it's kind of a challenge on the highway. Pretty much no 5th gear anymore unless im going downhill with a tail wind. Also, I now get 25 less miles on a tank of gas. Gears are on the list of upgrades now for sure. 3.07s with 31s wasnt bad at all, dispite what some people say.
Watching with interest as I'll likely need new tires before the end of the year. Currently on 30" Maxxis Bighorns that my 05 Sport came with - and have zero complaints. Others have commented on how noisy they are, but it really doesn't bother me at all (they are loud, no question about it). I'd love to move to 31s, but my 9-year-old yellow lab won't be able to get in with a lift (the 1/2" added with the bigger tires is probably negligible).
BTW, Powder Monkey, I was in that exact same spot Saturday. I'll be there a lot this summer. Did you get the North Beach Access pass? Depending on tide, I may be a bit north instead since it's likely to be a lot less crowded.
