I know it's a simple fix, but have you tried replacing the thermostat yet?
I have an '89 YJ, and the temp and oil pressure never read until we replaced my thermostat, and then everything started working fine. Could also be a bad oil pressure sending unit.

Beautiful CJ by the way! I drool over a CJ every time I see one.
