Chili should be bagged and frozen within 2 hours of roasting. It goes bad.

The hatch chili truck on Wyoming and Montgomery, usually has some this late. Haha or my secret stash is my parents garage freezer, they get 5-6 sacks a year. As we leave open door and grab some.
