Just a diff obsession

Any hard core grillers here? I bought a Big Green Egg today. Immediately threw some chicken on, hope to do a roast soon. Anyone own one? I am open to tips!

What time is dinner?? My father in law has a smoker and does ribs and brisket pretty often over the summer. Looking forward to those!

My most requested grilled item. Peeled uncooked shrimp, sprinkle with Old Bay seafood seasoning and garlic powder--flip and repeat

dangit now im hungry.. I like taking jalapeños and put cream cheese on them and put it on the grill. you can also put a piece of fajita chicken on the jalapeños and cream cheese and wrap with bacon.. mmmmmm

An ABT. I love those. That's actually where I got idea for this chicken from.

So if you like those, make the chicken. Exact same idea.

Or you could put some salmon steaks on slabs of cedar and grill them with some lemon and pepper, with some grilled asparagus on the side. That is good stuff

I don't own a wood slab but I've been looking at buying one. Is cedar the way to go? I hear that's the best way to cook fish or seafood.

For your asparagus try taking a handful and wrapping with bacon then sprinkle some parmesan cheese on it then grill. (I wrap almost everything in bacon ha. Did bacon wrapped artichoke hearts few weeks ago)

You can pick up a pack of cedar slabs for a couple bucks at a home depot or a lowe's, then just soak them in water, lay the salmon steaks on top, and let them grill, depending on how hot you're cooking, you may have to add more water after they're been on there a bit, the wood will start to char, that's what you're looking for.

I cook on the grill al the time but I love my smoker. I just did a fresh ham this weekend and it was fantastic.

I can't wait to smoke on it. That's one reason I bought. A perfect smoker. Turkey season is April 1. Hoping to kill one to smoke a wild turkey.

I made some awesome steaks. Let marinade in this west indies stuff. Got the Egg up to 725 or so. 90 seconds on each side, then 90 seconds again on first side with everything closed. Perfect medium rare.

My uncle sells those at his pool store. I absolutely love when he cooks on them. They, I think, are the nest smoker out there

I have tried many types, but I prefer Jack Daniels chips for pork. Apple and maple have been very good with turkey. I thought the mesquite was good on turkey, but the rest of the family didn't like it. I have some cherry to try next.

Keep me posted on the cherry.
I'm currently using the default mesquite but I'd love to branch out and try diff ones.
I would imagine the Jack Daniels be good on beef.

From what I heard, cherry is pretty harsh smoke. Apple is very mellow and I love it on poultry and pork. Pear is very similar.

My favorite food pic. Brisket my dad helped me with. I've never done one and it's always intimidated me but with his superior guidance it turned out great.

My father in law smokes ribs and brisket and they come out great every time. Word of caution, smoking a Corned Beef Brisket is NOT a good idea. At least not to eat.

I've started soaking the corn in water for couple hours then pulling back husk, removing silk, rubbing with butter and seasons, then pulling husk back on. Grill for 35-40 mins. Best corn I've ever had.

Yes it is. When you wet them down you can really smell it! I always use Cowboy Lump charcoal as well.

I will def invest in those JD chips.

I've heard good stuff about cowboy. My Egg game with a 20lb bag of their brand but at $27 a bag I won't be sticking with that. I've also heard Royal Oak is good quality. They make BGE's lump.

Most people don't even use lump, which to me is crazy.
