Gotta be the peregrine. Something about 225+mph is just mind boggling. They also look so cool in flight. Around here you can see eagles, but way off and way up usually. Hawks are a bit more abundant, and really cool too. I know them from growing up in Georgia, but I didn't know much about peregrines until I moved up here and saw these "little" birds zipping around in the woods.
Yes, they are by far my favorite.
And the history of falconry is old. The best book on it was written some 800 years ago, and is still used.
