The Idle Sound of a Tuned Engine Question

Has anyone ever noticed how on high performance engines, their idle sound is very choppy and sounds like it is going to die almost? It goes "poppoppop.......poppoppop" almost like its missing. A normal engine has a nice purr at idle. But once the tuned engine revs up it sounds great. Why is that?
