There are lakes all over the place(mainly in the north). The Salt River (just south of Saguaro Lake) is a lazy river where people tube all the time. Kayaking in Saguaro would be nice as you can paddle way to the back where the beaches are. Don't know much about Pleasant, but Lake Powell that's on the Utah border is AMAZING. Just Google Image search it.

But remember, Arizona is a big state, takes a long time to drive from the valley to the top.
