Am I taking a big risk if I wear 'em out or should I just go get a better tire such as a Goodrich AT KO? Any advice is welcome!
I got my '07 a little over a month ago. I have the stock P225/75R16's also. I do a lot of prospecting that takes me back into the mountains. so far they've performed admirably. Although i wouldn't tackle big boulders or any kind of competitive off roading, they take me down rutted fire roads, across washes, through bushes, over smaller rocks, and can cut four pizzas at one time.

afd660 I havent taken the Wrangler ST's through much of anything other than puddles and a dirt driveway LOL... but I had a set of Goodyear Wrangler AT/S and a rock punctured right through the tread. Wasnt even doing any rough offroading, just riding a trail. It was a P rated tire instead of a LT.
