89 YJ Intermittent Stuttering Highway

I have an 89 YJ with a 4.2l manual transmission. It has a stock carb on it that was just rebuilt motor and trans have less than 6000 miles on a rebuild. Driving down the road it started out fine able to do 80 easily then I pulled over to put the doors on since it started raining and started driving down the road. At this time I couldn't do more than 70 without it stuttering (by this I mean engine cuts off but then starts back since its a manual). So I stayed behind the truckers for about 50 miles till I needed gas. Gassed up and drove down the road able to do 80 easily again. This happened a couple of times intermittently during my trip and has me stumped on the problem.

New fuel pump, rebuilt carb, new fuel filter (less than 3000 miles on it).

Any help with this would be great, I do know these carbs have all kinds of problems but I would like to see if I can get it fixed without having to buy a carb considering I'm in Cali on vacation and have to drive it back to Idaho. And Cali won't let me buy anything but the stock carb.
