new wheels/factory tire
 
I've never changed rims on a vehicle before, so bear with me, please.

I've got an 08 unlimited that came with 17x7.5 aluminum wheels and
p255/75r17 tires. I am looking at getting some new wheels.

I would like to do this with minimal additional work for myself and my dad :)
Would a 17x8 wheel with 4.5 backspacking and 0mm offset fit the tires properly?

i hadn't come across 17x7.5 in size listed, when browsing for wheels. So I need an exact match on current rim size then?

That would work but it's not the most effective use of your resources.
Most people would swap both the wheel (not rim; these aren't ghetto-mobiles) and tire and sell/swap their take-offs. If you plan to run the same tires, why not wait until they wear out and then get your wheels? By only swapping the wheels, you've only modified for the sake of aesthetics and that's fairly contrary to the Jeep idiom.
