Bacon!!!!
 
I am going to try this....

Candied Bacon
8 smoked bacon slices (we slice these very thin from a slab with a slicer)
4 tbsp light brown sugar
1 pinch cayenne pepper
Preheat oven to 325F
Drag bacon through brown sugar till lightly coated arrange on silpat* on sheet pan
Sprinkle remaining brown sugar and cayenne evenly over slices
Place another silpat on top and place in oven
Bake for 15 min, raise oven temp to 375F and bake for 5 min, check and see if crisp.
Check every min until ready. Be careful because it can burn easily.
Starting low keeps the bacon flat during cooking; otherwise it would ripple

Definitely pics and a critique when you do it.... Sounds yummy! Only I'd have to do about 3 pounds if it's good.... :D

mmmm bacon had some today. the place I work at lunch deep fries their bacon for their sandwiches yu,,, makesit crisp and salty

Totally made this last night, but I added my own twist...

1) wet marinade: put the bacon in a bag with brown sugar, cayenne pepper, maple syrup, molases, and a splash of jack. Let soak for an hour

2) baked them on a rack on a pan so any excess liquid / fat would drip off.

3) half way through I sprinkled extra brown sugar on top so it would melt and caramelize.

4) 15 min @ 320, add the sugar then 15 min @325.

Amazing but soo sweet. Really good this morning with breakfast. better cold than warm I believe.

In the summer I slice strawberries in half. Mix some marscapone cheese with a bit of finely minces rosemary, and put a dolup on each strawberry half. Top each with a piece of crisp panchetta (or bacon).

Awesome summer treat. Sweet n Salty.
