Majority of tires don't run at the advertised tire sizing. Tire companies measure differently along with a few other factors also. My 33x12.5 duratracs measure in at around 31.5" if I remember...

If you put clients In it regularly I'd say stick with the 2.5" and 35s. You could also run the 35s at stock height and install some flat fenders and you'd be all good. I don't know your client base...
