31x10.5 tire would be more ideal on a 15x7 vs. 15x8 in low psi applications such as offroading. It will hold the bead on the wheel better. Most that run 33x12.5 prefer an 8" wide wheel.

If you love the driveability of 31's, 32's will be worse. I would stick with 31's with 3.07 gears. My 4cyl with 4.10s seems a perfect fit for my 32's BFGs.
