I am not sure how it would hurt the tub, my main concern was ease of welding and not worrying about sparks falling on my. Also planned on doing a solid undercoating if I do remove the tub.

off set is the distance from the center of the wheel to the surface that actually mates with the hub/rotor.
So take the width of the wheel divid by two and add the offset to get your backspacing...

Removing the diff cover will let you know. Just look for silvery oil and or chuncks...

You should be fine. If you use rtv you should let that sit with no oil in it overnight then add oil if you use a cork or rubber gasket you are good to go as soon as you bolt it together and add oil

Or you could try cycling the switch on and off. You pump will prime the system a few seconds each time its turned on. So turn it on and wait a few seconds then off then on and wait a few seconds....
