I have a 2014 JK and I feel like my low fuel light comes on when I have plenty of fuel. By plenty of fuel, I mean that it seems to come on when I still have 15 to 20 Litres of fuel left in the tank....

I had the same problem, I found the only way for it to work was to lock the seat in its upright position, then slam it down with the seat fully locked. It is awkward but the normal way of slamming it...
