new to Wranglers, not new to Jeeps

Hi all,
We owned a CRD Liberty (2.5 OME lift, full armor, 31's ) for a half dozen years, towing it behind our RV for the last 4 years. That car took us a lot of places ( white rim trail, above the arctic circle, El Camino del Diablo ), but in the interest of more space we traded for a D-max Chevy ZR2, choosing it over a four door Wrangler based mostly on interior comfort, space and ride quality. Everything is a tradeoff, we just didn't go down the Wrangler path.

We've been happy with the when it runs, but that's only been about three weeks out of four, averaged over the last year, so we're working on a lemon law buyback and have started looking at Jeep JKU Rubicons.
One of the ones we're looking at ( a 2016 Hard Rock ) has badly worn tires that stick out far beyond the fenders and are on, in my opinion, way too wide a tire. While that may be popular, that's not what I'm after so our plan is to immediately replace the tires/wheels. I don't want to go too large, we still want good on-road performance and while we do some moderately diffficult stuff off road ( and would likely do more with a more capable vehicle ) we need this as our daily driver.

So, is there a good guide for what relative sizes of tire work well for Wranglers? I'd like to get something a little larger than the 33" tire that came stock, but I'm not sure what size range ( metric/aspect ) to look for. I'm also looking for some guidance for a value priced rim that's NOT a fake beadlock, but offers decent protection of the spokes and the valve stem - rock rings would be fine, we've put a fair number of deep gouges into our rims on both the Libby and the ZR2 over the last few years.

Any suggestions?
