Will the bolts break off in the heads?

I need to change my driver's side exhaust manifold gasket, I'm not 100% sure that it's not cracked in some place I'm unable to see. If it is cracked I can fix it. My question is what are the chances that the bolts will break off while removing? That is something I do not want to deal with.

It’s always a possibility. With the heat and cool cycles they are subject to they collect moisture. Apply some penetrant for a few days ahead of time. There’s not a lot of torque on exhaust manifold bolts so you will know if you have a problem pretty quickly. Gently turn it counter clockwise if it starts to back out smoothly your golden. If it does not then turn clockwise just a bit. The back and forth motion, plus more penetrant, will work most of the time. The main thing to avoid is just cranking it hard and fast.
