Exclamation Max Size tire on stock wheels

I just bought a 2003 Rubi. The PO put chrome aftermarket wheels on it with BF Goodrich AllTerrain AT's.

The tires will need replacing by Winter AND the wheels have little back spacing so the tires hang about 3" or so beyond the fenders. One of these days I will be pulled over and ticketed.

So here is my question

I just bought some used Jeep Wrangler wheels (15x8) sine they have back spacing that will place the tires back under the fenders. I like the 31x10.5x15 tire size. Is that the largest tire size I can go with on stock wheels without brake, suspension, rubbing and or fender issues?

Oh, no lift kit and everything standard except for the new Rancho 9000xl shocks. I am also a little concerned that the 15x8 wheels might be too large for the 31x10.5x15 tires when I air down.
