Why so many 31" options over 30"

Been looking around the forum for the last few weeks since I bought a used TJ- so first off, thanks to this community for the resource and insane amount of knowledge in one place.

Now to my question- why do so many drivers go with a 31" instead of just a 30x9.50? It seems like a 30" would rub less, not require bump stop adjustment, and is still available in some good AT and MT options.

BTW. I ask because I have an almost too good to pass up deal on 5 Nexen Roadian MTs in a 31x10.5. This is not a daily driver so fuel economy is less concerning- but having a good handling stock suspension TJ with a good AT or MT tire for taking off road ( no big rocks) is important to me.

Because 31x10.5 look a lot better than 30x9.5
