Anyone have any issues with 18x10 rims with 35/12.5/r18 with a 2.5 lift? I was going to get 18x9 but because i told the tire shop i wanted my rims to stick out a little they talked me into 18x10. Does anyone have this set up? Any rubbing issues? Pics please.

You want rims with about 4.5" of backspacing aka -12mm offset and they should be fine. It's the backspacing that controls how much the wheels stick out of the wheel wells.

On a 10 inch wide rim he will need -24 offset to equal 4.5 backspacing.

OP the height and width of the rim will fit fine on your jeep. Just make certain they have about -24 offset or 4.5 backspacing give or take a little.
