I recently replaced the water pump and thermostat on my 05 LJ. While replacing the thermostat I made the mistake of using a thermostat that was rated at 205 degrees and took out one rated at 195 degrees. I live in southern Nevada, is this going to be a problem as the weather heats up.

Replacing the thermostat is an easy fix — put in a new 195° when you get a chance (you won't have a problem driving until you get a chance to replace it)

just changes at which point your thermostat open at. either 195 degrees or 205 degrees. will you hurt anything? no. just depends if you want your engine running warmer than stock, better for cold weather. so in your case you would benefit more from the 195 degree thermostat.
