I'm going to get an UltraGauge OBD-II display, but their MX version which can display OEM-specific data is only $10 more. Does anyone have the MX version and is there a reference somewhere of how to set it up for a Jeep?

The UltraGauge MX FAQ shows this example for a Landcruiser-specific OEM value:

Transmission Temp #1 (*C)
Abbr1: TFT Abbr2: *C (This sets the text abbreviation that is displayed with the gauge value)
TDATA: 07E121D9000000 (This is the manufacturer code to access the parameter)
TCTRL: 92 RCTRL: 10 (This tells UltraGauge how to send the code and where in the response the gauge value can be found)
RPOS: 0810 MTCH: 210000 ( This tells UltraGauge how many bytes the data is and where it is in the vehicle's response)
X: 0001 /: 0100 +: FFD8 (This is the math applied to the response to render the gauge)
Out Format: 00 Ave: 00 (Special Formatting such as Temperature, or pressure, etc.)
Left/Right: 32 (number of digits to display too the left and right of the decimal point)
I found a few older threads about hacking the OBD-II but it wasn't readily apparent if or how any of the results might be helpful here. It's awfully difficult to search for this more generally because search engines inevitably focus on the many discussions of OBD-II trouble codes.

No point in wasting ten bucks if this stuff isn't known, but the software developer in me hates not having access to that tasty, tasty data.

Apparently the more-popular ScanGauge OEM codes ("X-Gauge") work the same way. Here's trans temp (2012+ but also pre-2012 in an earlier post) which apparently requires that ECU "wake-up" code on the same page:

The ScanGauge page is kind of a mess but they also list oil pressure for 2012+:

Pre-2012 by engine, trans temp only:

Found some folks discussing the display of cylinder head temp but no actual codes. There was also discussion of non-US diesel fuel-rail pressure but again, no codes.
