I have read that plasti-dip is easy to remove on smooth surfaces, but the interior hardtop does have a certain texture to it. Has anyone had experience with doing this to their hardtop?

It would peel right off with ease. Just make sure you put on enough coats (4 minimum.) You would probably need about 5-6 cans to spray a JKU hardtop.
