so I got a new set of rims and tires. Bigger tires to be exact. What psi should they be inflated to? I was told to use what the jeep says no matter what.

Jeeps psi is for daily highway use and likely to give the best mix of performance, economy, tread life. But it is not a "no matter what" pressure. Off road, especially in sand you may get better performance at a much lower psi.
Do the chalk-test and/or try different PSI to see what feels best for you..
Some tires I've run at 35..some at 28.. I run my current tires at 30lbs..
When off-road I run them at 13-15lbs.
